Pink lentil soup with sweet potato

Ingredients
1 T Safflower Oil1/2 C Red Onion 1/2 C sliced Carrots 1/2 C sliced Celery1 C Sweet potato chunks3 cloves Garlic minced2 medium size Tomatoes chopped2 C Vegetable Broth1 C Soy Milk2 tsp Cumin 1T Turmeric1 tsp cayenne pepper 1 tsp ground cinnamon1/2 C Pink lentils
Directions
Saute onion, carrots, celery and sweet potato in safflower oil (about 10 minutes) Add garlic and tomatoes. Saute additional 5 minutes. Add broth and soymilk and spices, bring to a boil. Cook for 20 minutes or until sweet potato is almost done. Add lentils and cook an additional 10 to 15 minutes. (Don't forget to rinse and sort lentils prior to adding them)

Makes about 4 one-cup servings
