1lb 93% lean ground turkey2 stalks celery, chopped5 shallots, diced fine2 bell pepper, chopped1/2 red onion, diced1 head iceberg lettuce, shredded3 jalapeno pepper, diced1 14.5oz can low sodium black beans, drained5 oz quinoa, uncooked10 servings Red Hot Blue tortilla chips (110 chips)taco seasoning packetsauce:8 oz plain greek yogurt or fat free sour cream14.5oz can diced tomatoes with jalapenos1 can salsa (8 oz)3 tsp lime juice16 tsp sriracha hot saucefresh cilantrocuminchile powderpaprika
Prepare quinoa according to package (takes about 15 minutes). Meanwhile, cook turkey in skillet with taco seasonings. Add black beans towards the end to heat up. Stir quinoa into turkey and black beans.
Mix together all sauce ingredients.
Mix all veggies together. Add quinoa and turkey when done. Top with sauce and crushed tortilla chips.
