Chicken-Tomato Soup

Ingredients
2 boneless, skinless chicken breasts1/2 onion, chopped1 cup coconut milk1/2 cup chicken broth1 (8-oz) can tomato sauce1 (14-oz) can Italian diced tomatoes1-1/2 tsp Italian seasoning1 clove garlic, minced
Directions
Combine all ingredients in a 3- to 4-quart
slow cooker. Cover and cook on LOW 8 to 9
hours or HIGH 4 to 6 hours until chicken shreds
easily. Shred chicken in the slow cooker. Stir to
combine shredded chicken with remaining
mixture; season to taste with salt and pepper.
