collard green wraps with sunflower seed spread

Ingredients
collard green leaves (8)1 red, yellow, or orange bell pepper1 small jicima or 2 large carrots1 avocado1 cup alfalfa sproutsfor the sunflower spread:1/2 cup sunflower seeds1 clove garlic1 tablespoon lemon juice1 nub of fresh ginger (grated)1 tsp Bragg's liquid aminos (plus more for dipping)
Directions
for the sunflower seed spread, place all ingredients in a food processor, pulse lightly until the texture looks like oatmeal.

place a dollop on on each collard leave.
arrange all sliced vegetables and sprouts in center of the leave, and roll from one end.
