Easy Shrimp Fajitas

Ingredients
1 Tbs olive oil2 Cups bell pepper and onion slices12 oz Frozen Precooked Medium Shrimp1 packet fajita seasoning1/3 cup of water8 eight inch whole wheat tortillasSalsa (optional)
Directions
1. Heat oil in large nonstick skillet
2. Add peppers and onions and cook over medium - high heat for 5 minutes, stirring occasionally. Meanwhile thaw the shrimp in a stariner under cool running water and drain on a paper towel.
3. Add fajita seasoning and ater to skillet. Stir to combine, add shrimp and cook 30 seconds or until heated through.
Divide shrimp and vegetable among tortillas and serve with salsa.

Makes 4 servings - using 2 tortillas and 1 cup filling

    I made these, but thought the fajita seasoning was too "limey." They smelled FABULOUS and tasted good, despite the overwhelming lime taste of the seasoning...it's kind of high in sodium, too, but this was quick and easy to have every so often. - 7/21/11
