Carrot Beet Curry

Ingredients
1 yellow onion2 TBS coconut oil2 large carrots4 cloves garlic1 15-oz can beets, drained1 13.5 oz can coconut milk1/4 tsp turmeric1 tsp cumin seeds1/4 tsp cayenne1/2 to 1 tsp salt (to taste)
Directions
Saute chopped onions in oil until soft.
Add carrots and saute until soft.
Add garlic and continue sauteing for one minute.
Add spices and toast for one minute.
Add beets and saute for one additional minute.
Add coconut milk and simmer for 10 minutes.
Serve with rice (not included in nutrition information). Could garnish with cilantro if desired.
