Oatmeal Raisin & Cherry Pecan Muffins

Ingredients
1 cup old fashion rolled oats1-1/8 cup Light Vanilla Silk SoyMilk1/8 cup Splenda brown sugar blend1/8 cup Organic Light Brown Sugar4 oz unsweetened applesauce2 egg whites 2/3 cup Red Whole Wheat Flour, All-Natural, KIng Arthur1/3 c Bob's Red Mill Whole Grain Soy Flour, 35% Protein1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1/2 Tbsp. cinnamon1/2 tsp nutmeg1/8 tsp cloves1/8 tsp allspice1/4 c raisins 2 Tbsp chopped dried cherries1/2 c chopped pecans
Directions
Soak the oats and in soymilk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together. Stir in nuts, raisins and cherries.
Add dry ingredients to wet and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20 minutes or until done.
