Baked Squash Casserole

Ingredients
8 c yellow squash or zucchini, thinly sliced½ onion, minced¼ C Celery, minced6 oz Cottage cheese2 eggs1/2 c quinoa, cooked, toasted1 tbsp thyme1 tsp siracha1 tbsp sage Salt, pepper
Directions
Cook quinoa in water until soft. Spread quinoa on sprayed sheet pan. Spray quinoa with more cooking spray. Bake at 350 for 30 minutes or until toasted. Stir and breakup clumps halfway through.

Combine squash, onion, celery in bowl. Microwave 10 minutes then drain liquid. Beat egg. Mix in cottage cheese and spices. Pour into sprayed oven dish.
Bake in oven at 350 for 45 minutes until mixture is set. Top with quinoa and return to oven for 15 minutes.
