Ingredients
1 sweet potato3 carrots1 stalk of celery1 small onion1 clove of garlicsalt to tastepepper to taste1/8 tsp all spice1 tsp paprika1 bay leaf1 can of black beans, drained and rinsed3 cups of veggie broth, low sodium1 can diced tomatoes4 cups baby spinach
Directions
throw everything in the pot except the spinach and cook for 30 - 40 minutes. add spinach 10 minutes before you eat.
slow cooker instructions. put everything in the slow cooked and cook for 6-8 hours on low. add spinach 10 minutes before you eat.
