Bean Soup with Ham

3 cups dried beans (Great Northern or any you have on hand)1 large yellow onion, chopped1 large (28 oz) can diced tomatoes1 tsp. chili powderjuice from one lemonwater2 cloves garlic2 tsp. saltred pepper or Tabasco (optional)Ham, diced--I put in a lot (24 oz) from the ham on the ham bone. You can add or subtract, as desired.Ham bone from Honey baked or similar ham
Wash and sort the beans. Place beans in a pan or kettle, cover with water and the 2 tsp. kosher salt, and soak overnight. In the morning, drain, add 2 quarts of water. Add ham bone. Bring to a boil. Reduce heat and simmer slowly, 2.5 to 3 hours. If it cooks down too much, you can add water, as desired.
Add 1 large onion (1 cup, chopped), 1 large can tomatoes, red pepper or Tabasco (optional), 1 tsp. chili powder, juice of 1 lemon, 2 cloves minced garlic. Salt and pepper to taste, but check first because the ham bone will have made it salty already, and when you add the ham, that's even more salt. Simmer another 30 minutes. Serves 12-14. Even better as a leftover the next day when it absorbs the flavors even more fully!
Serving Size: Makes approx 14 1-cup servings
