Ingredients
1/4 each Red, green, yellow and red peppers1-1/2 cups mushrooms sliced1 zucchini diced1/2 onion sliced1 tbl Olive oil2-3 tbl balsamic vinegar2 tsp dijondried oregano, basil and thymeS & P
Directions
Whisk dressing ingredients, add vegetables and toss, let sit for an hour, bake 350 30min or until desired doneness.
