DubDub's Seafood Chowder

Ingredients
1/2 bag of Mac's Seafood Chowder mix1/2 can clams, juice included2 cups diced potatoes1 cup diced celery1 cup diced onion1 Tbsp Bacon Fat1/4 cup flour1 Tbsp minced garlic1 cup water1 cup milk500mL Whipping Cream
Directions
Poach Seafood in pot of water, strain and shock with cold water. When cooled, chop into bitesize pieces and set aside

Chop Potato and boil until still firm, but cooked. Strain, rinse and set to one side.

Chop and dice onion and garlic. Place in a micrwave safe dish with 3 Tbsp water. Cover container loosely and cook until soft. (approx 2x5minutes) Set to one side

Cook garlic in the bacon fat,and then add the flour to make a roux. Cook roux out for a few minutes. Add 1 cup of water, whisking quickly to avoid lumps, then add the milk. Once base is complete, add all other ingredients. Let simmer on very low heat for about a half hour
