Morgan's Slow Cooker Beefy Mushroom

Ingredients
1 2 1/2 Ib. Sirloin Tip Roast, trimmed1 15 oz. can Swanson Beef Broth, 50% less sodium/Fat Free1 cube Beef Bouillon (or 1 tsp. bouillon soft packed)1 packet, Good Seasons Italian Salad Dressing Mix (dry)3 cups Fresh Mushrooms Sliced2 cup (16 oz. tub) Fat Free Cottage Cheese, blended till smooth
Directions
Place roast, beef broth, beef bouillon, and Italian Seasoning mix into the crock pot. Cook on high for 6 hours, or on low for 8 hours. In the last hour, shred the beef in the pot, add the cottage cheese (blended in blender till smooth), and the fresh sliced mushrooms. Stir in till combined. Let cook 1/2 to 1 hour more.
