Fresh Garden Lasagna w/ Fresh Noodles from scratch

3 medium Egg Flour, white, 2 cup Morning Star Meal Starter Crumble, 3 cup Tomato Sauce, Hunts Sauce, 2 cup Carrots, raw, 1.5 cup, chopped 1 Med. Green Bell Pepper, 1 serving Mushrooms, fresh, 1 cup, pieces or slices Onions, raw, 1 medium (2-1/2" dia) America's Choice Fat Free Ricotta Cheese, 2 cup Albertson's Low Moisture Part-Skim Mozzarella, 1 cup
Make noodles (according to Joy of Cooking). Roll them out for a 13 x 9 pan
Make sauce: brown 1/2 onion and crumbles in pot. Add chopped up carrots, pepper, other half of onion, mushroom (I used a food processor). Deglaze with tomato sauce. Spice to taste.
Layer noodles, sauce, noodles, ricotta, noodles, sauce, mozzarella. EAT.
