Plum and Banana Spiced Flapjack

4 plums1 banana1-2 tsp cinnamon2-3 tsp brown sugar (dark muscavado)half a cup of oats
Chop plums and banana finely, and put in a heavy pan with the cinnamon and brown sugar. Place on a medium heat and stew, you may need a little water or lemon juice on occasion to stop it burning/sticking.
When the fruit is soft and mushy, add the oats and stir them in well to combine. Add to a lightly greased baking tin (I use 1 cal cooking spray).
Put in a preheated oven (180*C) for about 15-20 mins until firm and chewy, keep an eye on it browning too much.
Serving Size: Makes enough to fill an 8 inch round cake tin
