Ground Turkey Enchiladas

16 oz lean ground turkey1 packet low sodium taco seasoning1 cup light sour cream1 cup chunky salsa1 can fat free cream of mushroom soup1 1/3 cup Mexican style shredded cheese11 low carb, small tortillas
Brown turkey
Add 1/3 cup water and taco seasoning packet; simmer 5-10 minutes
Combine soup, salsa, sour cream, and 1 cup of cheese in large bowl
Set aside 1/2 cup of mixture for later
Add cooked ground turkey to main mixture
Fill tortillas with 2-3 tbsp of mixture (should fill 11 tortillas)
Place filled tortillas in 9x13 pan
Cover all with remaining 1/2 cup of mixture
Top all with remaining 1/3 cup of cheese
Bake at 350 for 25 minutes
Serving Size: Makes 11 small enchiladas
