Low Carb Chicken Soup

Ingredients
INGREDIENTS4 cups chicken broth2 TBSP EVOO1 lb chicken breasts, chopped or shredded1 cup celery, chopped1 cup onions, chopped10 oz bag fresh spinach1 teaspoon basil1 teaspoon saltblack peppercelery salt (optional)
Directions
Salt and pepper chicken breasts, in a large pot, saute chicken on both sides for about 4 minutes each, add onion and celery, saute a few minutes longer, add chicken broth, spinach, basil and salt. Add enough chicken broth, make sure it covers ingredients, Bring to a boil over high heat. Reduce to a simmer and leave covered for about 90 minutes. Serve immediately. Season with black pepper and celery salt, as needed.
