Sweet Potato Zoodles with Eggs

Ingredients
1 small sweet potato (spiralized)1 cup of baby kale4 bella mushrooms1/4 small onion2 poached eggs1/2 slice of American cheese1/8 sliced avocadoDash of cayenne pepper
Directions
Spiralizer 1 small sweet potato
saute 4 mushrooms, 1/4 of small onion in 1/2 tbsp of coconut oil, once cooked toss in baby kale.
add in spiralized sweet potatoes and cook until desired tenderness.
Top with poached eggs, cheese and avocado.
