Sweet Potatoes & Quinoa Patties

Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup Sweet potato, 2 cup, cubesGarlic, 2 clove *Extra Virgin Olive Oil, 2 tbsp Red Onion Raw (1/4 cup, 40g or 1.4oz), 0.5 cupsaltblack pepperchillipaprika
Cook the quinoa; let is drain and cool down.
Boil or bake the sweat potato. Let is drain and cool down. Mash.
In a pan, heat 1 TBSP olive oil, add the onion, salt, black pepper, chilli and paprika. When translucent, add the garlic and cook for another couple of minutes. Add the quinoa and cook for 2-3 more minutes. Then toss this mix on the mashed potatoes. Make about 12 patties and cook each one on the frying pan - with a bit of olive oil - for 2 minutes on each side.
