Ham Bone Stock

Ingredients
3 good sized ham bonescarrotcelery3-4 bay leavesonionparsley stems1 tsp black peppercorns1 tsp kosher salt1.5 gallon/24 cups water
Directions
Combine all ingredients in a stock pot and bring up to a boil, reduce down to a simmer. Simmer until liquid is reduced to half or until all the flavor has been extracted from the bones. Liquid should be a deep rich color. Will take a good 4-8 hours, this is an all day affair so make on a weekend or whenever you have a day to spare.
