Chicken Pie Muffins

Meat Mixture:2 cups cooked and diced chicken 1/4 tsp. saltPepper to taste1 cup frozen peas and carrots1/2 cup cooked yellow onion1 cup slightly cooked hash browns2 slices reduced fat pepper jack cheese cut into pieces1/2 cup original almond milkEgg Mixture:I/2 cup original almond milk1/2 cup Heart Healthy Bisquick1/2 cup egg substitute
Preheat oven to 375 degrees. Bake 28 to 30 minutes.
Line muffin pan with papers and spray with non stick spray.
Combine all ingredients of meat mixture.
In small bowl, combine the egg mixture ingredients.
Spoon one tablespoon egg mixture into each cup. Top with 1/4 cup meat mixture. ( Will seem very full but just pile it on.) Top that with another tablespoon of egg mixture. Place in oven and bake. Cool muffins on rack.
