Chicken and Artichokes

Ingredients
2 lbs skinless, boneless chicken breast halves, cut into bite size pieces1 Tb salt1 Tb fresh ground black pepper1 Tb paprika4 Tb butter8 oz fresh mushrooms, sliced2 Tb all-purpose flour (not whole wheat)1 cup chicken stock3 Tb sherry1 tsp dried rosemary1 pkg frozen artichoke hearts, thawed
Directions
Preheat oven to 375 degrees
Sprinkle chicken with salt, pepper & paprika to taste
Melt butter or margarine in heavy skillet & brown chicken on all sides
Remove to foil-covered 9 x13 inch casserole
Add mushrooms to pan drippings & saute
Add flour & gradually add stock or broth & sherry. Season with rosemary; deglaze skillet
Arrange artichoke hearts among the chicken pieces & pour sauce over all. Re-cover with the foil & bake for 40 minutes or until tender

    This was excellent. Substituted EVOO for butter and Chardonnay for Sherry, used canned artichokes too. The dinner was awesome and my husband loved it. I guess it's that kind of recipe that you can improvise as needed. It's a hit with us!!! Thanks for the recipe. - 10/19/08
