Ingredients
Brown rice 2 cups cookedYellow Sweet Corn, frozen, 1 cupBeans, black, 1.5 cup (drain if using canned)Salsa, 1 cupDiced Tomatoes, No Salt Added, 1 cupLow fat sour cream 2% Shredded Cheddar Cheese, .75 cup
Directions
Mix all ingredients except cheese and a casserole dish. Sprinkle cheese on top. Bake uncovered for 30 minutes.
