English Roast Potatoes

6 White or red potatoes1/2 c. low-sodium beef broth, fat-free1/2 tsp salt1 tbsp Canola Oil
1. Place a shallow metal baking pan containing the beef broth, salt, and Canola Oil in the oven (325 degrees) on the top rack.
2. Peel potatoes and cut in half (or into smaller cubes if desired).
3. Bring potatoes to a boil in a large saucepan of water (with a dash of salt, if desired) and simmer for about ten minutes (until the outside has cooked and softened). DO NOT OVERCOOK!
4. Drain off water and shake the pan vigorously to roughen up the surface of the potatoes.
5. Place potatoes into the baking pan and baste well.
6. Return the pan to the oven and bake for one hour, turning once or twice and basting to ensure even browning.
