Strawberry Pancake Topping

Ingredients
1 3/4 cups fresh strawberriesAbout 1/4 to 1/2 cup water2 tsp Splenda (or whatever sweetener desired)1 Tbsp corn starch1/8 tsp ground cinnamonSaltLemon juice (optional)
Directions
Cook 3/4 cup of sliced strawberries for about five minutes sweetened with Splenda and seasoned to taste with cinnamon and (optional) lemon juice. Mix corn starch in about 1/4 cup water (also, a bit of margarine if desired) and add to pan with remaining berries (the partially cooked berries added last give a wonderful freshness to each bite!). Cook just a few minute more and serve over pancakes topped with cool whip or whipped cream. Enjoy!
