8 cups beef broth1 large head kale, chopped1 can black beans1 can great northern beans1 can cannellini beans5 stalk celery, diced4 medium carrots, diced1 medium onion, diced1 medium red bell pepper, diced1 medium tomato thickly diced1 tbsp rice vinegar3 sprig thyme3 bay leafSalt & Pepper to tasteVegetable Oil Cooking Spray
In a large stock pot, lightly spray and heat vegetable oil and saute diced carrot, onion, celery, and green peppers until onions are translucent. add tomatoes, kale, and vinegar and simmer an additional 2-3 minutes. Add beans, thyme leaves (removed from stems), bay leaves, and seasonings and simmer an additional 2-3 minutes. Add beef broth and bring to a boil over high heat. Once soup is boiling, reduce to a simmer (low heat), cover, and cook 1 hour. Remove bay leaves before serving.
