Puerto Rican Style Beans

Ingredients
2 tsp canola oil1 can of beans (15.5oz) pinto, red, etc.1 can of tomato sauce 8oz1 packet of sazon2 tbsp sofrito7 olives (manzanilla) stuffed with pimiento1 tsp capers2 medium sized potatoes peeled and cubed1 can of water (use tomato sauce can)
Directions
Put oil in a deep saucepan and saute the sofrito. After 3 mins add tomato sauce, sazon, olives, and capers. Stir for 2 minutes.

Add the beans, potatoes, water and stir.

Turn heat to medium high. When boiling, cover with a lid and turn heat to low.

Wait 20 mins and they are ready. Makes 4, 1 cup servings.

You can make this with the following kinds of beans. Black, Red kidney, pigeon peas, small red beans, lima beans, pinto beans, black-eyed peas, pink beans, or chick peas.

    If you use dry beans and leave them in water over night to soften and for some reason the beans taste better. I don't know why but it always does. - 7/22/11
