Tuna and Cannellini Bean Salad

Ingredients
* 1 15.5-oz can cannellini beans, drained * 2 3-oz cans good quality tuna packed in olive oil, undrained * 2 tablespoons red wine vinegar or cider vinegar * 1/3 cup diced onion * 1 ½ tsp dried sage leaves * 1 tablespoon extra-virgin olive oil * Black pepper to taste
Directions


1. In a medium bowl, combine beans and undrained tuna..
2. Add vinegar, onion, sage and oil.
3. Gently mix to combine.
4. Season with pepper.
5. Chill overnight to let flavors combine.
6. Serve chilled or at room temperature.

    I used parsley but didn't fridge it and it wasn't too shabby but i'll agree, fridge definitely could bring it out better. :D - 9/28/09
