Mediterranean Quinoa Salad

Ingredients
For the dressing:3 tablespoons lemon juice2 tablespoons red wine vinegar1/2 tablespoon olive oilPinch of oreganoFor the salad:1 cup quinoa, cooked3 cups spinach1 red pepper, diced10 grape tomatoes, halved10 kalamata olives, sliced1 cup diced cucumber1/2 cup feta cheese
Directions
Mix dressing ingredients and set aside. Mix spinach, quinoa, and about half of the dressing with a wooden spoon. Add the pepper, tomatoes, and cucumber, olives and the remaining dressing, stir. Fold the feta in. Serve immediately or chill.
