Vegan Tater Tot Casserole

Ingredients
White sauce:2 cups almond milk4 T. floursalt and pepper to tastevegan "chicken" bouillonCasserole:2 16-ounce bags of frozen veggies, I used mixed peas, corn and carrots1 bag of tater tots, use only enough to cover the top of the casserole1/2 c soy cheese1 package beefless ground beef
Directions
Brown the soy crumbles. Sprinkle flour over the crumbles and stir to coat. Add almond milk slowly while whisking. Add the bouillon.

Return sauce to medium heat and cook until the sauce thickens. Use a wire whisk constantly as sauce thickens.
Once thickened to coat a spoon, remove from heat and add salt and pepper to taste.

In a 9 x 12 inch casserole, layer the meat/veggies, soy cheese, and top with 1 layer of tater tots, side-by-side, end-to-end.
Bake for 40-60 min. at 350° F or until browned.
