Parmesan Ranch Potatoes

4 cups cleaned and quartered potatoes1 pkg powdered ranch dressing mix5 tbsp fat free Italian salad dressing1/2 cup chicken broth1/2 tsp Parmesan cheese
Mix the ranch dressing mix and Italian salad dressing in a large bowl. Add potatoes and stir to coat them in the dressing mixture.
Place the coated potatoes in a 9x13 baking dish and add the chicken broth. Cover with foil and bake at 400*F for 30 minutes. Remove foil and sprinkle with parmesan cheese. Bake uncovered for additional 15-20 minutes until potatoes are tender and most of the broth has been absorbed.
Serving Size: Makes 4 one-cup servings
