Oriental Ramen Noodle ColeSlaw Salad

1 (12 ounce) pkg broccoli coleslaw mix1/2 c sunflower seeds1 (3 ounce) pkg Oriental/Chicken/or Beef flavor of Ramen noodles - and yes, save the seasoning packet.1/2 c canola oil - vegetable oil will work as well.1/4 c white sugar1/4 c white wine vinegar - cedar vinegar will work as well.Bunch of chopped green onionsOPTIONAL: 1/2 cup silvered almonds or 1 cup of unsalted peanuts
Crush the ramen noodles as much as possible.
Combine broccoli slaw mix, seeds/almonds, and crushed ramen noodles in a medium to large bowl.
Whisk remaining ingredients (canola oil, sugar, seasoning packet from Ramen noodles and vinegar) in small bowl. Pour over the slaw mixture.
Lastly, add green onions.
Chill in a refrigerator for a minimum of 90 minutes before serving. I find that even if it sits in the fridge overnight it still tastes crispy and delicious the next day.
Serving Size: Makes 8 1-cup servings
