Sugar Free Chocolate Zucchini Cake

Ingredients
2 1/2 Cups Wheat Pastry flour1/2 Cups Cocoa Powder1 1/2 tsp Baking Powder1 tsp Baking Soda3/4 Tsp salt1 1/2 cups splenda3 egg Whites1 Whole egg1 Cup Applesauce1/3 Canola oil2 Tsp. Vanilla2 Cups packed grated Zucchini1 Cup Chocolate Chips
Directions
Preheat oven to 350 prepare a 9x14 cake pan by spraying with Pam baking.
Mix top 5 ingredients together in a bowl and set aside. Mix next 7 ingredients together until well blended. Slowly add dry ingredients to wet, while constantly mixing.
Pour into baking pan. Top with chocolate chips. Bake for 30-35 mins, or until toothpick comes out clean. Do not overbake. Cake is more like a brownie height. Serves 16.

    I am just glad that I have not had to deal with issues related to what chocolate I can eat (though dark does sometimes give me a hive or two). Though recently both mt daughters ad also my boyfriend are not able to eat it at all.

    This is such a yummy cake! Hershey's has SF chocolate chips, so this can be completely sugar free. I also have plans to crush the SF peppermints and sprinkle over the top the next time I make this recipe. - 8/27/12
