8 oz dried lima beans, soaked1 can condensed cream of mushroom soup1/2 yellow or brown onion, chopped1 cup shredded Colby and Monterey Jack Cheese
Place soaked lima beans in small crockpot or cook on stovetop, which takes less time. Cover with boiling water or vegetable stock. Simmer until cooked. Saute onions and mushrooms until onions are clear. Add to the beans. Stir in the condensed soup and any seasonings. Allow time to warm up. Add the cheese just before serving.
