Chicken Jambalaya

Ingredients
6 boneless, skinless chicken thighs, cut into 1" pieces2 tablespoons canola oil1 cup mild Italian pork sausage1 large onion, diced3 celery stalks, diced1/2 tsp. cayenne pepper1 tsp. thyme1 tsp. oregano1 tsp. salt1/2 tsp. black pepper3 cloves garlic, minced1 14oz. can diced tomatoes2 cups chicken broth1 cup brown rice
Directions

In a large saucepan, warm oil over medium heat. Brown sausage, add onions and celery and saute until tender. Increase heat to medium-high and add chicken and saute until lightly browned. Return heat to medium, stir in spices and garlic. Stir in tomatoes with juices, tomato sauce, chicken broth and rice. Bring to a simmer, then reduce heat to low. Cover and cook until rice is done, about 45 minutes.
