1 lb lean ground turkey1/2 cup chopped yellow onion 1 - 15 oz can dark red kidney beans (I look for low sodium)1 - 14.5 oz can diced tomatoes (I found Mexican style)1 - 10 oz can Ro*Tel original diced tomatoes & green chilies1- 8 oz can of Hunts NO SODIUM tomato sauce1/2 cup water1 pkge of chili seasoning mix OR add your own seasonings (cumin, chili powder, black pepper, crushed red peppers, & any other seasonings you like in your chili)(DO NOT drain any of the canned ingredients listed, add entire can + juice to recipe)
Cook turkey & onion in large skillet until turkey is no longer pink, stirring & shopping meat as it cooks. Drain IF necessary. Stir in seasonings then all the canned beans, tomatoes, sauce & water. Reduce heat to medium low & simmer 10-15 minutes, stirring frequently to make sure it's not sticking to bottom of pan.
