Cauliflower garlic alfredo

Ingredients
8 garlic cloves, minced1/4 cup unsalted butter1 head of cauliflower1/2 cup shredded romano or parmesan cheese32 oz vegetable brothsalt and pepper to taste
Directions
cut cauliflower into floweretes and boil until tender in 32 oz of vegetable broth. Melt butter in a small skillet and add garlic, saute until flavorful. add all ingredients to blender/processor and blend until smooth.

Serving Size: makes 6 servings of 2/3 cups each
