Potato Croquettes

Ingredients
1 lb potatoes1/8 c. milk2 t becel1 c. cheddar, shredded1 onion, chopped1 c. panko bread crumbs1 egg, lightly beaten
Directions
Boil potatoes and drain. Mash with milk and becel. Add cheddar and onion. Salt and pepper to taste. Roll into balls 1.5 inches in diameter. Dip potato in lightly beaten egg and then roll in bread crumbs. Bake at 350 for 20 - 30 minutes

Serving Size: Makes 16 1/2 inch croquettes
