Broccoli Coconut Soup - AIP (MBG)

Ingredients
3 Tbsp. coconut oil1/2 cup chopped red onion3 large broccoli crowns, coarsely chopped4 cups chicken bone broth1 14 oz can organic coconut milk.
Directions
Saute onion in coconut oil until softened and translucent. Add broccoli; stir well to coat with oil. Saute about 5 minutes. Add broth. Cover, stir, turn heat to low and simmer until broccoli is very tender (20 minutes or so). Using immersion blender, blend until smooth. Stir in coconut milk. Add salt and pepper to taste.

Serving Size: Makes 5 generous bowls.
