Tri-Pepper Pine Nut Pasta

Ingredients
Ronzoni Healthy Harvest whole wheat spaghetti, 6 oz. [1/2 pkg.]Red Bell Pepper, 1/2 of large, cut in thin stripsYellow Bell Pepper, 1/2 of large, cut in thin stripsOrange Bell Pepper 1/2 of large, cut in thin stripsExtra Virgin Olive Oil, 1 tbsp3 cloves garlicPine Nuts 1/4 cup[1/2 - 1C. hot pasta water]Parmesan cheese, shredded 4 ozA spice blend of freshly ground salt and pepper, soul food seasoning, ground red pepper, herbes de provence, garlic powder --- about 1/4-1/2 teas. each
Directions
Cook pasta, save 1 c. hot pasta water. In large saute pan, cook pepper in olive oil, then add garlis. Whenboth are very lightly sauteed and fragrant, add spices and the hot water 1/4c. at a time, until peppers are soft but still bright. I cover the pan at the beginning for a few minutes.
Toss pasta in bowl with peppers and serve. Add 1 T [more/less] parm with pine nuts tossed on top.
