Lighter Apple Dumpling Muffins

3 cups of flour (I used half white and half whole wheat)1/3 cup sugar 4 tsp baking powder1/2 tsp salt1 tsp nutmeg2 cups peeled chopped apples1 cup unsweetened applesauce1/2 cup skim milk2 eggs3 Tbsp sugar1 tsp cinnamon2 Tbsp unsalted butter (melted)
preheat oven to 350.
mix dry ingredients (leave the cinnamon and 3 Tbsp sugar for topping). Mix milk and egg and applesauce. Combine dry & wet ingredients and fold in apples until just mixed.
Fill muffin tins and bake for 25 minutes.
Mix 3 Tbsp sugar and 1 tsp cinnamon. While muffins are still warm brush them with melted butter and sprinkle with cinnamon/sugar mixture.
Serving Size: makes ~ 20 muffins
