spinach omelete

Ingredients
1 large egg3 T egg whites - Egg Beater or equivalent1 TBSP skim milk1 cup fresh spinach1 oz feta cheese, crumbled1/2 c sliced or diced fresh tomatobasil, oregano sprinklessalt, peppernonstick spray
Directions
Beat together egg and egg whites, with 1 TBSP milk.
Spray a non-stick 8-inch skillet with non-stick spray.
and warm to medium heat.
Pour egg mixture, add salt and pepper, cover and fry for about 3 minutes until top starts to set. Flip over.
Put dry spinach, tomato and feta on top of omelet, sprinkle with basil and oregano. Cover on low heat until cheese melts.
Fold omlet in half to serve.
