Cuban Pork Stew

Ingredients
1 lb uncooked sweet potatoes peeled and cut into 1/2 inch pieces1 lb uncooked lean only pork loin, cut into 1 inch pieces14 1/2 oz canned diced tomatoes, with green chiles1 medium garlic clove minced1/4 c unsweetened orange juice2 medium uncooked scallions chopped1/2 tsp table salt1/4 tsp ground cumin1/4 black pepper2 T fresh lime juice2 T fresh cilantroCombine ingredients in a 4 to 5 quart slow cooker and cook on low setting for 7 hours.Stir in lime juice and cilantro.
