Curried Sweet-Potato and Lentil Soup

Ingredients
Butter, salted, 2 tbsp Sweet potato, 3 cup, cubes Celery, raw, 2 stalk, large (11"-12" long) Onions, raw, 1 cup, chopped Garlic, 1 clove Curry powder, 1 tbsp Ginger Root, 3 tsp Cumin, 1 tsp Coriander 1 tsp Salt, 1 tsp cayenne, .5 tsp Vegetable Broth, 2 cupLentils, 2 cup Water 6 cup (8 fl oz)
Directions
melt butter over medium heat. add sweet potato, celery, onion, and cook for 10 minutes, stirring occasionally. Add garlic, curry powder, ginger, cumin, coriander, salt, cayenne. Cook for additional minute, stirring. Add lentils, water and broth. Bring to a boil, then reduced to low heat a and simmer for 40 minutes until lentils are soft
