Lower calorie citrus pancakes

Ingredients
1/2 c flour1 1/2 t baking powder 1/2 t baking soda 1 t orange zest1/2 t salt3 T sugar3/4 c cashew milk unsweetened 1/2 c fresh orange juice1 c fat-free ricotta4 T butter melted and cooled 1 egg1/4 t vanilla extract
Directions
1 combine flour, baking powder, baking soda, orange zest, salt, sugar. Mix well.
2. In another bowl, whisk milk, orange juice,ricottat, butter, egg, vanilla together.
3. Mix wet and dry together lightly. Should be lumpy. Do not over mix.
4. Coat nonstick pan with cooking spray.heat at medium.each pancake uses1/4 c batter. Turn when bibles appear. Top as sesired
