4C WATER1 CAN PUREED PUMPKIN1 1/4 C COARSE GROUND CORNMEAL/POLENTA1C UNSWEETENED SOY MILK (OR OTHER NON DAIRY MILK)4TBSP EARTH BALANCE BUTTERY SPREAD2 TBSP NUTRITIONAL YEAST1 TSP SALTPEPPER TO TASTE

BRING WATER AND ONE CUP PUMPKIN TO A BOIL. MAKE SURE THE PUMPKIN IS WELL COMBINED AND SMOOTH. ONCE BOILING REDUCE HEAT AND ADD POLENTA. STIR CONSTANTLY UNTIL IT STARTS TO THICKEN (ABOUT 15 MIN) ONCE ALL THE WATER IS ABSORBED AND THE CORNMEAL GRANUALS ARE FULL OF WATER, ADD 1C SOYMILK, STIR UNTIL ALL ABSORBED. ADD REMAININD PUMPKIN, EARTH BALANCE, STIR UNTIL SMOOTH. ADD NUTRITIONAL YEAST, SALT AND PEPPER, UNTIL WELL COMBINED
