Veganomican Deep Chocolate Bundt Cake

1 3/4 cups fresh brewed coffee2/3 cup unsweetened cocoa powder1 1/2 cups granulated sugar1/3 cup canola oil1/3 cup unsweetened apple sauce1/4 cup cornstarch2 tsps Vanilla extract1 tsp Almond extract2 cups whole wheat flour1 tsp baking soda1 1/2 tsps baking powder1/2 tsp salt2 tsps confectioners sugar
Lightly grease an 8 or 10 inch Bundt pan. Preheat oven to 325 degrees. Bring the coffee to a simmer and whisk in the cocoa. Set aside to cool. In a separate bowl mix together the sugar, oil, applesauce, and cornstarch until dissolved. Mix in the extracts. Once the chocolate is cool mix that in too. In a separate bowl sift together the flour, baking soda, baking powder and salt. Mix into chocolate until smooth. Pour batter into bundt pan and bake for 45-55 minutes until knofe or toothpick comes out clean. Cool for 20 minutes and invert onto plate. Once cool sprinkle with confectioners sugar and serve.
