Ingredients

1 cup chopped bell peppers1 cup chopped onion3-4 minced garlic cloves1 tablespoon olive oil1 12 ounce package of veggie crumbles1 15 ounce can black or red beans, drained1/2 jar salsa1 14 ounce can diced tomatoes1 tablespoon chili powder1 tablespoon oregano1/2 teaspoon cumin
1. Saute peppers, onions and garlic in oil in large pan over medium-high heat for 2 minutes.
2. Stir in veggie crumbles and cook another 2 minutes.
3. Add remaining ingredients and stir well. Bring to a boil, reduce heat to medium-low, cover and simmer for 20 minutes stirring occasionally.
