Spanish Rice with Chorizo

Ingredients
•1 cup long-grain rice•1 large onion, diced•2 cloves garlic, minced•1 tablespoon smoked paprika•2-4 links chorizo (or other sausage), sliced•1 (14-oz.) can tomatoes, diced•6 cherry hot peppers from jar, diced
Directions
Cook rice. While rice is cooking, saute onion in a little oil over medium heat in large saucepan. When onion is soft, add garlic and paprika and saute for about 1 minute. Add chorizo and cook until heated through. Add tomatoes and hot peppers and cook for a few minutes until they lose their raw taste.

Over low heat, combine cooked rice and onion-sausage-tomato mixture. Add a little water if mixture is too thick to thin it out. Season with salt and pepper.
