Zucchini, 2 cup, slicedGreen Peppers (bell peppers), 1 cup, strips*Peppers, sweet, red, fresh, 1 cup, slicedCarrots, raw, 1 cup, strips or slices*Kikkoman Lite Soy Sauce, 2 tbspSalt, 1 tspEnough water to cover zucchini
Makes 2 1-cup servings:
Prep:
Slice the zucchini. Put water and salt in a bowl. Put sliced zucchini in the bowl and wait. Meanwhile slice peppers and carrots. Drain the zucchini after 30 mins.
Cook:
Pre heat a non-sticking pan. Put all the vegetables together. Add soy sauce. Stir and cover the lid for 5 mins. Then stir every 2 mins until the vegetables are cooked according to your taste.
Suggestion:
Serve with 1 cup of non-fat yogurt near a poultry or red meat meal.
